This beer is a hymn to those who dare. It is a dream constituted by a myriad of incredible and unique shades. A creation without preconceptions; limitless and unbounded, because the whole is much more than the mere sum of its parts.
In the glass, on the nose and on the palate.
This Smoked Sour beer is golden in colour, with opalescent reflections. Its head is abundant and fine grained, creamy in colour.
The aroma is unexpected and intense: the presence of smoked malts is clear, along with evident notes of fire and peat. The sour note from Brett is delicate and progressive, unmistakably fresh and citric.
At first on the palate you get the pleasant tingling typical of spontaneous fermentations, followed by a smoky and sapid dryness. Medium body, phenolic bitterness and a touch of astringency from Brettanomyces. An intermingling of contrasts that merge into an elegant and synergic equilibrium.
